Wyoming Whiskey: Bourbon from the Big Horn Basin
Most American bourbon comes from Kentucky. Wyoming Whiskey's founders, cattle ranchers Brad and Kate Mead, bet that world-class whiskey could be made from the wide-open plains of Kirby, Wyoming and they were right.
To make sure the liquid matched their ambition, they brought in Steve Nally, former Master Distiller at Maker's Mark, to set up operations. With Wyoming grain, Big Horn Basin limestone aquifer water, and serious distilling credentials, Wyoming Whiskey produced its first release in 2012 and hasn't looked back.

What Makes It a "Double Cask"?
Double Cask starts life as Wyoming Whiskey's standard straight bourbon — five years in new, charred American oak barrels. Then it goes into a second cask: former Pedro Ximénez sherry barrels for an additional 12 to 18 months.
5 yr
Cask #1
New charred American oak. Builds the classic bourbon foundation: caramel, vanilla, oak.
+12–18 mo
Cask #2
Former PX sherry barrels. Adds dried fruit, fig, dark chocolate, and a wine-like richness.
🥃
The Result
Wyoming bourbon character with a European sherry influence layered on top. Unusually complex for the price.
Mash Bill
68% Wyoming corn · 20% Wyoming wheat · 12% Wyoming malted barley · All state-sourced
Tasting Notes: Wyoming Double Cask
👃 Nose
Classic bourbon opens first, caramelized sugar, honey, vanilla bean. Then the sherry speaks: ripe fig, raisins, a touch of dark chocolate. Inviting and layered without being heavy.
👅 Palate
Full-bodied and velvety. Toffee, cinnamon, and light oak lead, followed by a burst of dried fruit and gentle baking spice from the PX casks. The sweetness and warmth interplay as it develops.
✨ Finish
Long and lingering. Drying oakiness balanced by residual sherry sweetness. Toasted nuts and leather on the fade. Complex without being hot or harsh.
🏅 Verdict
A genuine overperformer at its price point. Sherry-finished bourbons at this quality level typically cost significantly more. Wyoming Whiskey Double Cask is the definition of a sleeper hit.

How to Enjoy Wyoming Double Cask
🥃 Neat
The best way to appreciate the Double Cask's sherry character. Room temperature, Glencairn glass, 2 minutes to open up. A few drops of water will amplify the fruit notes.
🧊 On the Rocks
One large ice cube softens the spice without drowning the flavor. The sherry sweetness becomes more pronounced as the ice melts, a genuinely pleasant effect with this bourbon.
🍹 Old Fashioned
Wyoming Double Cask with chocolate bitters and a Demerara sugar cube is exceptional. The sherry influence and chocolate bitters are a natural pair. Garnish with an orange peel.
🥃 Manhattan
Use a quality sweet vermouth, the PX sherry finish in the Double Cask complements vermouth beautifully. Keep the vermouth ratio generous (2:1 bourbon to vermouth) to let the wine notes play.
🍖 Food Pairings
The sherry influence and dried fruit character pair well with glazed pork, smoked brisket, aged hard cheese (cheddar, manchego), and dark chocolate desserts. Pecan pie and the whiskey's natural sweetness are an obvious match. The bourbon backbone handles spice, try it alongside a bold barbecue spread.
Wyoming Whiskey FAQ
Is Wyoming Whiskey actually made in Wyoming?
Yes, 100%. The distillery is in Kirby, Wyoming, uses grain grown on Wyoming farms, and draws water from a limestone aquifer beneath the Big Horn Basin. This is genuinely local production, not sourced or blended elsewhere.
What is PX sherry and why does it matter?
Pedro Ximénez (PX) is an intensely sweet, dark Spanish sherry made from sun-dried grapes. PX sherry casks are among the richest finishing vessels in whisky, they contribute concentrated dried fruit (fig, raisin), dark chocolate, and a thick, velvety texture. It's the same style of cask used by premium Scotch distilleries to add richness and depth.
Which Wyoming Whiskey expression should I start with?
Double Cask if you want to see what makes Wyoming Whiskey distinctive, the sherry finish shows off the brand at its most interesting. Small Batch if you want to understand the baseline spirit before the cask influence is added.
How does Wyoming Whiskey compare to Kentucky bourbon?
The wheated mash bill (wheat instead of rye as secondary grain) gives Wyoming Whiskey a softer, sweeter profile similar to wheated Kentucky bourbons like Maker's Mark or Weller. The Big Horn Basin limestone aquifer water functions similarly to Kentucky's limestone-rich water supply. The key difference is terroir, Wyoming's climate and elevation affect aging differently, producing a slightly different character even with comparable production methods.
Is the Double Cask worth the premium over the Small Batch?
Yes — the sherry finish genuinely transforms the whiskey. The Double Cask and Small Batch share the same base spirit, but the PX sherry cask adds dried fruit, dark chocolate, and a velvety mouthfeel that make it taste like a noticeably more expensive bottle. The price difference is worth it.
