Hyde No. 8 Heritage Cask 1640 Stout Cask Finished Irish Whiskey is a blend of
- 75% Single Grain; fully matured in a first fill, flame charred, 200L bourbon cask.
- 25% Single Malt; fully matured in a first fill, toasted, 250L, Oloroso sherry cask.
All finished in an Irish Stout cask, which was seasoned with craft Irish stout from the www.cottonball.ie craft micro brewery in Cork City aged in a first fill, ex-Bourbon, American white oak cask for 3 months.
The stout is then disgorged from this cask, and then the cask is then filled with the whiskey and left to age for a further 6 months to ‘finish’ .

Aroma: A distinctive full bodied malty aroma with sweet vanilla and roasted coffee bean overtones.
Palate: Sweet, hoppy, biscuit taste, with a distinctive roasted coffee bean twist. •
Finish: Sweet caramel, perfectly balanced with a long, smooth, creamy finish.
