Copper Fox Rye is remarkable rye for several reasons. First its made with an extraordinarily generous amount of smoked malt: The mash bill is 2/3 Virginia rye and 1/3 Virginia Thoroughbred hand-malted barley—kiln dried with apple wood and cherry wood smoke - most ryes use a lower percentage of rye (the most expensive grain in any whiskey) with the legal minimum being a paltry 51%.
Cooper Fox also doesn’t use any corn in the mashbill, and they hand malt their barley (meaning they make it themselves which is a demanding if tedious process) and smoke their barley (very similar to the peating of scotch barley in terms of process) with a mix of 60 % apple wood and 40 % cherry wood. This imparts a unique batch of flavors. The whisky is double pot-stilled to between 150 and 160 proof then aged in used bourbon barrels into which are added a series of new and used apple and oak chips. After the initial aging, the whiskey is then put in a second used bourbon barrel to finish. It is non chill-filtered.
