Staff Tasting Notes - Courtesy of Royal MIle Whiskies Nose: Young cheddar cheese, smoked cheese, smoked sausage and kippers. Honey, melon and some smoke. Taste: After the nose, there was a suprising amount of coal smoke and peat smoke, with some parma violet sweetness. Well rounded and generally delicious! Overall: 'Would definitely buy a bottle' and 'I want one' were two of the quotes that summed up the mood when we tasted this blind. Distillers Tasting Notes Nose: A deep, rich and complex nose. First impressions are robust and maritime - of a salmon smokery, seaweed, tar amd even waxed oilskins. Then come salty-smooth food notes of melted butter and dried Serrano ham, plus dry orange peel and expresso coffee. Water raises more wax; some sweetness and smoke are still evident too. Palate: Starts sweetly and can be enjoyed at natural strength with plenty of smoke and an oily, textured feel (more waxed jackets). When wtaer is added it remains smooth, chunky and mouth-filling, with a pleasing sweetness and plenty of scented smoke to come. Finish: Long and maritime, with notes of linseed oil, white pepper, and fragrant peat smoke. Finish: Cigar ash.
