Ready for more country music-inspired whiskey? Bluebird Days is a collaborative whiskey between musician Jordan Davis and Bluebird Distilling Master Distiller Jared Adkins — “and their shared love for a perfect bluebird day.”
The bottle is a blend of two of the Pennsylvania-based operation’s distillates — a bourbon and a wheat whiskey, both produced in-house but provided with no age statement.
The whiskey certainly comes across as youthful and dominated by barrel char — with a bit of an underbelly that evokes camphor (at best) and boozy acetone (at worst). This fades toward a eucalyptus quality as it gets a bit of air, and water is of aid in this tempering movement, as well.
The palate lands rather on the harsh side, a combination of burnt wood melding fitfully with notes of orange oil, bitter hops, and a grassy quality that I’d associate much more with rye than wheat whiskey. Gritty and green — though not particularly earthy or muddy — the whiskey benefits here as well from water and/or air time, though not nearly enough to elevate it beyond a fairly pedestrian pour that just never really comes into its own.
Perfect bluebird day? Still searching for it.
