Cù Bòcan is an experimental Highland single malt distilled every winter at Tomatin Distillery in limited batches. It’s made with lightly peated Scottish barley to give it a signature wisp of smoke.
And Cù Bòcan Single Malt just released a new age-stated whisky to its range, the Cù Bòcan 12 Year Old.
A statement from the distiller noted that Cù Bòcan uses Caribbean rum casks to mature this expression, which combines their subtle smoke taste with flavors of grilled pineapple, sea salt, ginger and white chocolate.
Scott Adamson, blender and global brand ambassador, said that whisky matured in rum casks can be incredible, but rum casks are notorious for their variable quality and securing a consistent supply is difficult.
“This permanent addition to the Cù Bòcan range will be released in batches,” he explained. “With each batch we will explore casks from across the Caribbean, each with their own unique origin, history, and influence.”
Batch #1, distilled on Dec. 10th, 2010, was finished in a mix of rum casks from Guyana and Barbados. These islands are known for the use of molasses and pot still distillation. Adamson said that producers in Barbados, regarded by many as the birthplace of rum, blend pot still and column still rums making the island worthy of its reputation for well-aged, balanced expressions.
The casks sourced from Barbados provide a range of fresh tropical fruits and maritime notes, the blender explained. Known for the famed Demerara River, Guyana is home to some of the fullest bodied rums in the Caribbean. These casks have added more depth and warming spice.
Cù Bòcan released the fifth expression in the Creation Series earlier this year, Creation #5, which was matured in Andean oak casks. The current Cù Bòcan range includes Cù Bòcan Signature, Cù Bòcan 12 Year Old, and Cù Bòcan 15 Year Old.
Each Cù Bòcan single malt comes non-chill filtered and natural in color. Cù Bòcan 12 Year Old clocks in at 46% ABV. It’s available in specialist shops globally for a suggested retail price of £65 per 700ml bottle.
